Who Is Cabo Bob?
Cabo Bob is really the combination of the spirit of many characters I have met through my years of traveling and living in Baja California. The first encounter with a true Cabo Bob character was when my friends and I were camped out at a Southern Baja surf spot known as “Shipwrecks,” in the 80’s. We were staring at our second day of relatively flat ocean when we saw this beat up old VW Combi Van pull off the dirt road onto the beach. An old beach bum rolled out and saw we were getting ready to leave the infamous surf spot and he told us to hang out a bit longer. We rolled our eyes at this old surfer with his van packed full of junk, wondering if this guy even had the slightest clue what he was talking about. We let out a collective “yah right” and kept packing up our stuff. Within the hour we could hear the pounding surf on the beach as the waves grew larger… Turns out we had several days of great waves and great stories from the old Baja vagabond.
To my friends and me, Cabo Bob became the general term for that person who just has life and his surroundings figured out, he never stresses, he just moves on down the road to a better spot. After all, he knows where all the best places are! This restaurant was created to honor the spirit of Cabo Bob. We all know someone like him. Knowing that most of us can’t live like Cabo Bob, we hope you come to think of this as a great spot where you can come in and get the best Burritos and Fish Tacos in a stress-free environment—except for the cooks, we like to keep them busy.

Cabo Pulmo
In 1986 I made my first trip to Los Cabos and the East Cape. Besides getting great surf, the other highlight of the trip was snorkeling and free diving Cabo Pulmo. It was amazing, yet probably over-fished. Fast forward 1998 when we moved to Los Cabos with our boys, and after just three years as the first Mexican underwater National Park, the reef was making a huge comeback. Every time we show people our favorite places this is usually first or second because it shows what real conservation can do for an ecosystem. The reef and surrounding area are teeming with all types of sea life, probably the way John Steinbeck (the O.G. Cabo Bob) saw it in the 1940’s. Make sure you check it out on your next Cabo trip, you will be glad you did.

Welcome to Old Man's Cabo Bob's
Cabo Bob Knows Where to Find The Best
The best places to camp, the best fishing, the best surfing and most importantly the best places to eat. With this idea as our guidepost we have dedicated ourselves to finding the highest quality ingredients to go into our burritos, tacos, salads, soups and bowls.
Our Food
All of our proprietary flour tortillas are made from scratch daily with unbleached, untreated wheat flour and Rice Bran oil. That’s the foundation. What comes next is where we give the tortillas some personality and flavor. And we do it with no preservatives, no artificial flavors, and no fake colors. That’s right, all of our tortilla varieties get their color and flavor from real, all-natural ingredients–no funny business.
Our Buttermilk Flour Tortilla is a jack-of-all-trades. It’s got some fresh buttermilk and a blend of spices that add that intangible characteristic of being just a little more fun than your average flour tortilla. It’s hard to explain until you try it, but trust us, it’s really good and it goes with everything.
Our Cilantro Tomatillo Tortilla is fresh, light, and spunky. It’s got fresh cilantro and–you guessed it–tomatillos that give it a beautiful green color and a ridiculously fresh taste. Finished off with a blend of spices, this one has been perfected to go with fish or chicken (but if you like how it pairs with steak, brisket, or pork you’re definitely not alone).
Our Ancho Chili Tortilla puts off the vibe that it’s hard core and spicy but once you get to know it, you realize it’s way more approachable than it looks. Made with ancho chiles that are simmered into a sauce and then mixed into the dough, this tortilla isn’t spicy but does have a dry chile flavor that works really well with pork or brisket (or really anything).
Our Smoky Cheddar Tortilla is a bold character for sure. Made with real smoked cheddar grated straight from the block and a bit of our homemade BBQ sauce, this bad boy was born to add flavor to everything it touches–specifically anything with steak or brisket (but we’ll keep quiet if you like it with something else).
Just real corn without any gluten.
Our other tortillas are made with raw flour so we are not a gluten free enviroment
There is just nothing better than meat cooked on a Kamado Joe. We use Natural Oak Charcoal, which is wood turned into charcoal, nothing else added.
We use choice-grade (or higher) grass-fed, all-natural steak.
Our Slow Roasted Chopped Brisket starts with Angus Choice Beef then we add Cabo Bob’s Dry Rub and slow cook it.
Our Chicken Fajita is always fresh, never frozen white breast meat. We season the meat with our special spices and then grill it over Natural Oak Charcoal.
Our most popular rice is our All-Natural Brown Rice. We also have our Cilantro/Lime white rice for a more traditional flavor.
Our Black and Pinto beans are both great on their own, but our most flavorful is the Baja Beans. Our Baja beans are made with sautéed veggies and four unique types of Beans: Pink, Kidney, Navy and Black. All of our beans are vegetarian.
Only fresh tomatoes, cilantro, poblanos, onions and spices.
Just Hass Avocados, salt and lime juice. Simply Perfect.
Most “Ranch Packet” mixes use MSG and other preservatives. We never use any preservatives in any of our Recipes. Just Hellmans Mayo, Buttermilk, Ancho Chilis and spices.
This original recipe sauce is great on everything, once again without any preservatives, just quality ingredients… you’ll have to trust us on this one because it’s a secret recipe.
Only Fresh Jalapeños, Rice Bran Oil and spices go into this Spicy Salsa.
We use Real Monterey Jack cheese because it tastes better. We don’t use pre-shredded cheese because we aren’t really sure what an “anti-caking agent” is. We shred our own several times a week, and you can taste the difference.
This is the only type of lettuce you’ll find at Cabo Bob’s, no iceberg lettuce here.
We use only Sodas from Dublin Bottling Company. They only use Imperial Pure Cane Sugar to sweeten their sodas. They don’t use High Fructose corn syrup and neither do we.
High Fructose Corn Syrup is not allowed in the restaurant, period.
Cilantro, Tomatillos, Baja Beans (Pink beans, Kidney beans, Navy Beans, Black beans, Onions, Celery), Organic Brown Jasmine Rice, Sauteed Poblanos, Sauteed Onions, Sauteed Zucchini, Sauteed Squash, Lettuce, Mango Pico (mangos, cucumbers, tomatoes, poblanos, onions). There are actually more than 17 but we stopped counting there.
Vegetarian Friendly: All our ingredients are vegetarian friendly except for our steak, chicken, fish, pork, and brisket. Even our beans and soup broth do not include any meat products. All of our cheeses are made with vegetarian friendly enzymes.
Vegan Friendly: Chipotle Crema and Ancho Rancho are our only sauces that are not vegan friendly. Our Ancho tortilla, Cilantro Tomatillo tortillas, and corn tortillas are vegan friendly. No queso, shredded cheese, steak, chicken, fish, pork, and brisket.
We use farm raised Tilapia dipped in a light Bread Crumb wash, then we use Rice Bran oil to fry it.
We only use quality ingredients such as real Chipotle peppers and Fresh Roasted Habaneros in these special hot sauces.
At Cabo Bob’s, we take pride in our recipes and the ingredients we choose to prepare them. Not only do we search for high quality ingredients, we also make sure we keep unwanted ingredients out of the restaurant. You won’t find any high fructose corn syrup, soy products, tree nuts or unhealthy preservatives in our food.
I’m gluten intolerant, can you help?
Yes, we’ve got a good selection for you. Our corn tortillas, all the beans, both rices, all protein choices (except the fish), veggies, queso, salsas, fresh cold topping and sauces are all safe to eat. On top of that, our staff member will be happy to put on a fresh pair of gloves, heat corn tortillas wrapped separately in foil and follow you all the way down the line to avoid gluten contamination. We like to let people with celiac or extreme gluten intolerance know that we make our flour tortillas from scratch every day in the restaurants, so there is a small chance of utensils and food pans being exposed to gluten. We do everything we can to minimize it for you.
I’m vegan, do you have something for me?
Yes! Our Cilantro Tomatillo tortillas, Ancho chili tortillas and corn tortillas are vegan. All of our beans, both brown and white rice and sautéed poblanos, onions, and zucchini are excellent choices for you. Our fresh salsas, pico de gallo, cucumber mango pico, 66 Red pepper sauce, Xxtra Hot pepper sauce, Jalapeno sauce and balsamic vinaigrette are vegan as well.
I cannot eat dairy, can I still eat there?
Absolutely. There are more items that DO NOT contain dairy than those that do. Here’s a list of our foods that do contain dairy:
